A great appetiser to begin the meal with is baked brie fondue with balsamic crème served with toasted brioche, grapes and strawberries—a perfect marriage of savoury and sweet. The orange miso cod mignon with marinated capellini in collagen broth is rich in taste yet light enough for diners who want to leave space for dessert. Those with more robust appetites will find satisfaction in the Iberian “char siew” pork jowl served with celeriac purée and slow-cooked baby root vegetables. Another worthy recommendation is the cap of ribeye served with butternut squash purée, tomato confit and beef jus.
At dessert, the lemon lava cake with a citrusy, oozy centre is a refreshing choice after a hearty meal. The tanginess of the lemon is nicely balanced with a side of airy crème chantilly. The peach melba, with a mix of cream cheese, sesame tuile and raspberry coulis, is slightly heavier but totally worth the calories.
