This upscale Italian restaurant perched on the top floor of The Fullerton Hotel Singapore is located where a beacon once guided mariners to the safety of Singapore’s port. Today, it is a popular destination for the power lunch brigade from the surrounding Central Business District, and understandably so.

Its executive set lunch serves elegant Italian fare with offerings such as creamy burrata paired with sweet heirloom tomatoes and drizzled with olive oil. There is also the delicious asparagus Milanese that comes crowned with a runny egg yolk for richness and generous shavings of trufle to elevate it all from simple to special. Hits from the a la cartemenu, meanwhile, include the beef tenderloin with baby zucchini, barbaresco reduction and mashed potatoes; and the luscious roasted organic free range spring chicken with saffron mashed potatoes and root vegetables. If you like lamb, try the pistachio and lard crusted Welsh lamb served with red spring cabbage and smoked eggplant.

At dessert, go for the amaretto tiramisu, tinged with a lovely almost almond-like sweetness, or the bitter chocolate cake with orange compote and vanilla gelato.

If you find yourself at The Lighthouse Restaurant in the earlyevening, be sure to spend some time at the rooftop bar, which offers a breath-taking view of the Marina Bay area. There are apertivi like Campari sodas, prosecco cocktails such as mimosas, and delectable bar bites including slivers of 18-month langhirano aged ham with which to while away the hours before dinner.
