In a concrete jungle like Singapore, dining amidst the tropical foliage of the Botanic Gardens is a refreshing experience. At dinner, sit in the al fresco area, and enjoy the cool evening breeze and a lovely view of the gardens.
Halia means ginger in Malay, and this eponymous ingredient makes its way across the menu of contemporary European-style fare featuring Asian ingredients. These include dishes like a chilli crab dip with prawn crackers, and charred seasonal vegetables with a ginger milk sauce. One of the most popular dishes here is halibut baked with soy, mirin and ginger broth in a paper bag. All those flavours saturate the fish in the enclosed area, yielding an extremely flavourful yet delicate dish.
Try refreshing drinks like the Halia Infusion made of sun-dried ginger and wild mushroom honey. A small retail section purveys interesting condiments like ginger and pineapple jam, wild mountain honey, and ginger flower dressing.
