Highlights include sea urchin rolled in Kagoshima A4 wagyu beef, which tantalises with delicate buttery beef perfectly married with creamy sea urchin and smoked caviar, snapper sashimi with truffle that is remarkably fresh with a lovely firm bite, and grilled cod with saikyo miso cooked to flaky perfection, its sweetness wonderfully balanced with tangy miso.
