Tucked away at One Farrer Hotel, Sushi Jin offers a premium dining experience without the stratospheric price tag. There are two omakase sets at dinner, which serve up a procession of ambrosial delights. Dishes include a seaweed lobster salad, a gorgeous tai carpaccio topped with roe and truffle, and sea prawn with spicy cod roe.

Ocean-fresh seafood is flown in from Tokyo’s Tsukiji market thrice a week, and includes sea urchin, botan ebi and tuna. While the appetisers and cooked dishes are extremely tasty, it is the sashimi and sushi that really stands out. You’ll get sushi creations like unagi (grilled eel) topped with a nugget of foie gras, or slivers of lightly torched tuna on morsels of shaped rice spiked with justthe right balance of vinegar. Dessert is usually a slice of fresh fruit from Japan and a scoop of tangy yuzu sorbet.
