At Supply & Demand Esplanade, a modern trattoria and rooftop bar, an extensive menu of small plates, salads, pasta, pizza and desserts awaits. Zoom in on entrées such as scallop with kombu caviar, a beautifully plated dish of juicy panseared scallops, pickled zucchini and butternut squash purée. Alternatively, go for the octopus in potato purée, where a tender slow-cooked octopus is paired with silky-smooth Yukon gold potato and squid ink farfalle pasta.

Under the pasta section, try their handmade, silky smooth rendition of prawn and kombu tagliatelle pasta, and if you are in the mood for pizza, go for their signature Morning After, made up of tomato sauce, mozzarella, bacon, mushroom and a wobbly egg in the centre. The seared beef pizza, comprising tomato sauce, sliced seared beef, rucola leaves and shaved parmesan cheese, is another popular favourite. Elsewhere on the menu, the carte blanche section stands out for the array of meats one can choose from and leave the chef to prepare. The herb-crusted lamb rack—tender to the bite and packed with flavour—is a winner.

For dessert, their signature tiramisu is light, rich and positively decadent with chocolate coffee flavours lingering long after each mouthful. Drinks including international beers and signature cocktails are aplenty. Try Danger Dan, made with Chambord, Martini Bianco, peach schnapps, butterscotch liqueur and grenadine.
