The truffle chicken liver brulée with roasted focaccia is a delightful starter—savoury liver balanced perfectly by sweet brulée, with crunchy focaccia adding delicious textural contrast.
For primi, the pumpkin casoncelli in taleggio sauce, and the egg tagliolini with clams and Sardinian bottarga are excellent. If pressed, the casoncelli wins by a hair—the tangy cheese sauce complements sweet pumpkin filling, all enveloped and pulled together by delectably chewy pasta. The wagyu sirloin served simply with rosemary and crystal salt throws the spotlight on the high quality of the beef and its melt-in-your-mouth character.
Instead of the traditional cheese board, opt for the blue cheese mousse—a light, flavourful dish elegantly accentuated with lemon zest and acacia honey, and crowned with biscuit crumbs. For a sweet ending, the Mandarin is exquisite, comprising airily light mascarpone filling infused with orange, and presented as a replica of the whole fruit, complete with jellied outer shell and a chocolate stem.
