Sinfonia Ristorante is located on the ground floor of the stunning Victoria Concert Hall on Empress Street. Helmed by chef Simone Depalmas who is a firm believer in giving new life to quality ingredients by applying creative culinary techniques, it serves up a multi-course degustation menu alongside a varied a la carte menu.

There is a strong selection of appetisers—; in particular,try the roasted Mediterranean octopus served with watermelon, dill and leeks. The truffle chicken liver brûlée served with leek, local herbs and focaccia is also a sound bet.

From the pasta selection, the smooth angel hair pasta cooked al dente and topped with sea urchin and caviar is an indulgent treat that can be had hot or cold. Meanwhile, the boneless lamb rack with prune sauce, and the beef short ribs with salmon roe, chestnut and horseradish are outstanding, too with tender flavourful meat.

But where Sinforia really shines is at dessert. Top of our recommendations is the passion fruit raspberry meringue served with rose lychee sorbet——sweet, tart and harmonious in their pairing. The Mandarin, in which four versions of the fruit are presented in a dessert shaped like the fruit itself, is also a special treat.
