    Persian cuisine is grossly under-represented in Singapore. But at Shabestan, this beautiful royal cuisine can be enjoyed in all its re ned glory.

    The menu runs into several pages, and goes far beyond the usual hummus and falafel. Start easy with an appetiser platter of ve delectable dips, including muhammara, an earthy-sweet dip of red peppers and pomegranates, and kash-e-bademjan which blends smoky charred e plant pulp delectably with sweet onions.

    The charcoal grill platter for two is excellent, where lamb, beef, chicken, sh and prawn kebabs are marinated in Persian spices and grilled just right, so that each bite is juicy and immensely avourful. Charred vegetables and basmati rice are served on the side. Though all the kebabs are outstanding, the succulent, melt-in-the-mouth kubideh, comprising minced meat, stands deliciously apart.

    Don’t miss the stews too, for instance khoresh-e gureh- o-jujeh-o bademjan, a delightful spring chicken dish. Cooked with e plant and a light tomato-based sauce, it also surprises with the presence of green grapes, lending an exciting interplay of sweet and sour.

    Prices are not cheap. But Persian cuisine is taken very seriously here, and you can expect excellent food and knowledgeable sta . Just come with an appetite to do justice to the generous portions.
