Helmed by celebrity chefowner Emmanuel Stroobant, Saint Pierre—the only Relais & Châteaux restaurant in Singapore—is well-known for its modern French cuisine. Of the set dinner menus available, go for the 12-course adventure menu featuring produce such as Ohmi wagyu beef, hairy crabs from Hokkaido, caviar and marron—all deftly prepared. Notable dishes include the decadent royal Belgian Oscietra caviar with leek and bonito, and Hokkaido hairy crabs, beautifully presented and scented with lemongrass and corn, which highlight the delicate briny-sweetness of the crabs.
