Racines is a unique restaurant with four live cooking stations serving up a well-balanced mix of distinctly French and Chinese dishes. The rationale is that from the two cuisines, there will always be something to cater to every palate. Each of their dishes is crafted with organic ingredients and seasonal local produce, as well as herbs from the hotel’s own herb garden which is conveniently on display just outside the dining room. Friendly, prompt service and a stylish dining area with high ceilings and plush sofas set the tone.
Start with cuisses de grenouille, or wok-tossed frog legs in a delicate, crisp batter with baby leeks, dried chilli and grilled shishito peppers. Aromatic wok hei and moist tender meat make it exceptional. Or have the enticingly light lobster bisque complemented by lobster ragout tortellini.
Move on to the gorgeously tender, 48-hour slow-cooked wagyu beef cheek served with red wine-infused truffled mashed potato, roasted romanesco and confit sweet onion, or for a taste of Chinese, have the laksa with Hokkaido scallops and stir-fried rock lobster in a spicy coconut broth.
