    Pura Brasa Josper is best known as the makers of professional charcoal ovens used by restaurants all over the world. Enter Pura Brasa, a chain of restaurants established by Josper to showcase their oven technology. This is the company’s seventh outlet and its first outside of Spain.

    The food served is rustic, unpretentious, reasonably priced and mostly importantly, well-executed. Classic Spanish tapas offered include patatas bravas, fried padron peppers, Spanish omelettes, Iberico ham and grilled mussels. Pura Brasa’s charcoal seafood paella packs in plenty of flavour and is nicely moist, albeit sans crunchy socarrat, the burnished rice crust you’ll find in more traditional versions. (Apparently, this is an adaptation unique to Singapore.) Without a doubt, the standout dish is the nearly half a metre of Spanish pork ribs. The slab of pork ribs is cooked twice, first for 20 hours at 75 degrees Celsius, then finished off at 400 degrees Celsius in the Josper oven. Though they come with mustard and barbecue sauce, they really do not need any condiments—the ribs are moist and full of flavour, with meat that falls easily off the bone.

    Other specials: grilled mussels cooked on the Josper, grilled wagyu tomahawk steak and jamon Iberico. Lastly,expect a sound selection of Spanish wines, beers on tap and myriad cocktails.
