Pollen is a unique dining experience. Set in the Flower Dome at Gardens By The Bay, it feels like dining in the conservatory of a rich friend’s home. Executive chef Steve Allen, who worked at the Gordon Ramsay at Claridges restaurant in London, cooks up culinary treats in French-Mediterranean style while taking inspiration from regional Southeast Asian cuisines.
The Five Stories Tasting Menu is a delight. From this menu is Pollen’s Garden, an impressively fresh salad artfully comprised of flowers and emulsions; and Sea & Sand, a creation featuring king salmon with scallops, crab, and sea vegetables inspired by chef Allens childhood memories of playing by the ocean.
