The Pollen dining experience begins when you arrive in style on a buggy that ferries guests in from the entrance of Gardens by the Bay. Set within the Flower Dome, the restaurant is filled with the scent of flowers and herbs.

Foodwise, the venison carpaccio appetiser is a must-try. Those who prefer warm starters can go for the Scottish brown crab, an elegant combination of crabmeat and pancetta, with butternut squash and sage ricotta.

The Iberico pork collar embodies Pollen’s style of Mediterranean-inspired modern European cuisine. Tender, juicy Iberico pork is served with carrots, whipped feta, pickled ginger and aromatic dukkah for a lovely crunch. Even better is the confit gigha halibut topped with smoked egg yolk for a lush mouthfeel and a hit of umami, balanced out by the accompanying piquant apple jelly, radishes and salsa verde. The Mediterranean flavours extend to dessert too. The pumpkin, yogurt, white chocolate and blueberry dessert features Pollen’s homemade pumpkin ice-cream, which has the perfect balance of sweetness.
