Highlights include the braised trio of Irish fat duck, octopus and pork belly, and an unusual fried sea cucumber in abalone sauce, comprising thick-cut sea cucumber that is first braised, then fried, and served with a rich abalone sauce. The braised seasonal vegetables is delectable with melt-inthe-mouth cabbage, mustard greens and silky gravy made with superior stock. To end, have the aromatic wok-fried hor fun with preserved turnip or the crispy sweet and sour noodles. Eaten with black vinegar and sugar, the latter deliciously melds sweet, sour and savoury flavours.
