    Start down south with the bò cuốn lá lốt nướng, peppery betel leaves filled with spiced beef, lemongrass and garlic, grilled to perfection. Tuck each wrap into purple lettuce cups with rice noodles, before dipping into a sweet and savoury fish sauce for a piquant mouthful. From the Mekong River come dishes like crispy sea bass with rice noodles, herbs and tangy tamarind sauce; and signature spring chicken, grilled to a juicy succulence, wrapped in rice paper and fresh herbs.
