Palm Beach is one of Singapore’s longest-standing and most famous seafood establishments. Located in the heart of the business district, Palm Beach at One Fullerton offers indoor and al fresco seating with a gorgeous view of the Marina Bay waterfront. In recent years, Palm Beach has stood out for its culinary creativity by blending local and Western cooking styles in a menu that offers well-loved classics alongside inventive creations. Signature classics include the ever popular chilli crab and black pepper crab, while more modern creations include Josper oven-grilled Sri Lankan crab covered in mozzarella and crusted aged parmesan with French butter and pepper seasoning.

Expect luxurious finds such as an artful pairing of braised abalone and foie gras, and king prawn soup with vermicelli at Palm Beach. The latter boasts a fragrant hint of orange and coriander that will whet your appetite. Or savour a chilled seafood platter of freshly shucked Pacific oysters, succulent Scottish bamboo clams, sweet Hokkaido scallops, salmon sashimi and tiger prawns. Deep-fried treats that go well with apint of local Tiger beer include crispy baby squid—a chef’s signature that took over six decades to perfect.

Other key recommendations include tangy honey-flavoured barramundi kissed with ginger and kaffir lime, as well as Hong Kong-style steamed fish of your choice crowned with spring onions and scented with sesame oil.
