While most of the restaurant’s menu has been recently revamped, its signature Seafood Tower for Two thankfully has remained. Served dramatically with cascading liquid nitrogen, it tempts with impressively fresh lobsters, mussels, clams, scallops, prawns and tuna. Newly appointed chef Kamarl John scores a winner with his snapper bouillabaisse given an Asian twist, and meat lovers will enjoy the Iberico pork presa grilled mediumrare, with sides such as kale, pineapple chutney and a creamy celeriac purée. End with the delectable apple pie with cinnamon ice cream, presented as layers of sponge cake with tart apple.
