Its specialty, maze-soba, may have the word ‘soba’ in it – but this Tokyo chain restaurant is actually known for its Japanese dry ramen, topped with spiced minced meat, leeks, and bamboo shoot. Of the different varieties of maze-soba on the modest menu, have the original Tokyo maze-soba. The handmade udon-like noodle is chewy, with rich, robust flavours when mixed together with the accompanying sauce and condiments. Adding konbu vinegar and a slice of flame-torched melted cheddar helps balance things out further. Sides here are unexpectedly good, particularly the mentai tamagoyaki, or deep-fried Japanese omelette with creamy mentai mayo.
