A casual diner along Telok Ayer Street, Meat Smith is known for its bustling, merry atmosphere. As its name suggests, you’ll get American-style barbecue here, but with an upmarket twist. Kick start your meal with a decadent bone marrow prepared with garlic and sourdough cream. Then add a side of baked nachos topped with minced short rib and smothered with slaw, melted cheese, barbecue sauce and chipotle crema.

Top on its list of mains is a 500g buttery Mishima wagyu ribeye grilled to medium rare. This prized steak hails from a tiny island outside of Hagi Yamaguchi Prefecture in Japan where cattle remains strictly pure-bred. Other meat options include a South American escabeche-style grain-fed brisket with bread purée and chipotle sauce, as well as a smoky mustard-crust American Black Angus dinobeef rib.
