A Spotlight on Mad About Sucre’s Sweet Treats and Delectable Mains

Nestled in Bukit Pasoh is Mad About Sucre, a whimsical French patisserie, chocolatier and restaurant fronted by siblings Eric and Lena Chan.

Walk into Mad About Sucre and you might chance upon cake couturier Lena Chan finishing off an intricate icing or two. Her cakes are as mesmerising to eat as they are to watch in the making through the glass-panelled kitchen. We tried a slice of Saveurs de Printemps, made up of Russian earl grey-apricot cream, earl grey mousse, clementine, grapefruit and savoire sponge. The combination was simply divine.

Foie gras salad

Lena’s brother Eric helms the savoury kitchen, whipping up hearty Provencal dishes with premium ingredients like wild salmon, mussels and foie gras.

Sauteed beer-marinated pork belly

For mains, have the signature dishes such as a robust stew of tomatoes with handpicked crabmeat ($15), and slow-cooked oxtail ($42) which was tender and packed with flavour after an eight-hour braise in Burgundy wine. Or go for their summer specials like wild-caught barramundi in light miso broth ($38) and sautéed beer-marinated pork belly ($38).

Mad about Sucre offers new confectioneries themed around childhood Caribbean summer holidays. Treat yourself to Sunkissed, a combination of pink guava, light cream cheese and Normandy sable ($12.80); and St. Dominique ($12.80) made of dark chocolate, rum, plantain and Brittany crunch. These are also available as tea-pairing sets from $20.70.
