    This stylish 36-seater by Gemmill Lane is run by chefowner Jeremmy Chiam who serves Japanese-French dishes, particularly highlighting “the Japanese penchant for grilling on binchotan”. Designed for sharing, some stellar plates include coldsmoked hamachi with wakame, sesame-shoyu, shishito and leek, and sous-vide mangalica pork jowl with katsu curry. A signature dish is the uni and caviar, where Japanese corn is cooked in bacon broth, made into an umami-laden custard and mousse, and paired with creamy wild-caught bafun uni and shoyu pearls. End with a rich, heady dessert of Valrhona chocolate coldsmoked with apple wood then incorporated into a light cake. The smokiness complements the chocolate amazingly well, and pairs nicely with the tart and creamy yoghurt sherbet served alongside.
