Tucked away in the luxe surrounds of the Capella Singaporeon Sentosa, The Knolls is an all-day dining establishment that seamlessly transforms from a breakfast buffet venue to a smart Mediterranean dining restaurant. With their intimate interiors and expansive terrace overlooking the Straits of Singapore, The Knolls counts amongst the few restaurants that can truly transport diners to a faraway holiday destination.
Amongst the highlights of the dining experience is apricot chicken tajine. This Moroccan-style dish has a sublime balance of flavours that lifts the fork-tender, slow-cooked chicken. An alternative version, served with the same combination of cous cous and vegetables, is roasted lamb rack for two. For those inclined towards a lighter meal, The Knolls serves a very credible oven-baked cod that is served with a steamed egg white “tart”.
Desserts here are gratifying. The churros are served warm and crisp with a trio of melted chocolate, lemon curd and whipped vanilla cream. Equally credible is chocolate fondant made with 64 per cent dark chocolate, which readily dribbles out of its moist surrounds.
