JustIN Flavours of Asia, celebrity chef Justin Quek’s latest establishment, boasts uplifted local fare and great views of the Singapore skyline. Try the satay made with deliciously juicy New Zealand lamb, good even without the peanut sauce. While the foie gras xiao long bao is somewhat hit-and-miss, the flaky, subtle john dory in XO sauce shines bright, along with the Maine lobster Hokkien noodles, generously topped with fresh lobster meat. Desserts are creative. Have the sugardusted ice-cream sandwich featuring palm sugar icecream, and apple pie, made with filo pastry, and served with gula Java ice-cream.
