    Set in Joo Chiat, Jimoto Dining is a hidden gem to which regulars flock for good, affordable omakase. It is cosy, seating just nine at its sushi counter with chef Sato skillfully helming the pocket-sized restaurant alongside warm and friendly service.

    Start on Sato-san’s indulgent omakase journey with some cold junmai sake. Next comes the nimono course, featuring daikon simmered in dashi and topped with a generous prawn meatball. A briny fresh platter of seabream and red snapper sashimi follows.

    The sushi course is just delightful, with the perfect sushi rice flavourful and slightly warm. Lying on top are maguro (bluefin tuna), served with a light touch of shoyu to bring out its sweetness, and otoro (fatty tuna) with a touch of mustard to accentuate its rich flavour. The aji (Japanese horse mackerel) and hamachi (yellowtail) sushi each come with red vinegar which beautifully enhances without overpowering.

    The meal is complete with a classic bowl of ikura (salmon roe), uni (sea urchin) and konburi (vegetable ‘caviar’), and miso soup.

    For a moment, you are transported to the back alleys of Japan, where one can enjoy a casual night out of sushi and sake, without breaking the bank.
