Jade at The Fullerton Hotel Singapore specialises in Cantonese cuisine including traditional favourites from past decades given a modern touch. Helmed by chef Leong Chee Yeng, the food is decidedly and deliciously bold in flavour.

Their signature dishes are a must-try as they are masterfully executed and feature fresh, premium quality ingredients. These include deep-fried crab shell stuffed with fresh Sri Lankan crab meat, simmered egg noodles with Boston lobster and housemade X.O. chilli sauce, as well as sautéed Kagoshima wagyu beef with crispy garlic in Cambodian black pepper sauce.

Unlike many Chinese restaurants that favour the many shades of red for their interior design, Jade bucks the trend as an oasis of calm, awashed in pale pastel turquoise and delicate floral and bird motifs. Its location within one of Singapore’s most significant heritage buildings also means the neoclassical architectural details such as an extraordinarily high ceiling and distinctive plasterwork, bestow the space with a distinguished stateliness.
