Perched on the 70th floor of Swissôtel The Stamford, this intimate 40-seater has long staked its place at the top of Singapores fine dining scene. And with English chef Kirk Westaway at its helm, it seems that the best is yet to be.
There is no a la carte menu; instead you choose your desired number of courses from the degustation-only menu. But rest assured you are in good hands. Chef Westaway typically sends out a delicious parade of snacks such as dainty foie gras macarons to whet the appetite, before following up with pristine plates and well thought-out pairings.
Highlights from past visits include the Alaskan king crab paired with uni and caviar for a sweet and salty bounty from the sea; and Westaway’s signature Egg in an Egg, featuring an organic egg yolk smoked with rosemary, set on a steamed egg custard and topped with inky pearls of caviar.
