Synonymous with quality ramen, the IPPUDO restaurant chain follows the traditional cooking method of Hakata tonkotsu ramen. Cooked for 18 hours, the broth undergoes lower-heat maturation for another 24 hours to develop added depth of flavour, before it is ready for use as a base for all its ramen. Exclusive to its cosy Shaw Centre outlet are popular options: the Spicy Black, featuring spiced minced meat curry miso paste in tonkotsu broth with spicy fragrant oil; and the Kuro Special, black honey vinegar noodles with umami egg and condiments. Good non-ramen selections are the torched beef tataki and pork bun.
