IndoChine Chijmes
IndoChine offers a peek into the rich, diverse culinary history of Indochina, from authentic Mekong to colonial French-inspired dishes. Begin with the IndoChine platter of tasty appetisers featuring white sesame-coated chicken wings, leafy rice paper spring rolls, charred sugarcane prawn quenelles and pork sausages. Add to that a refreshing pomelo and poached tiger prawn salad tossed in dried shrimp and seasoned with fish sauce, chilli and a touch of lime. Next, go for the tangy tom yam soup or a healthy Vietnamese beef broth swimming with morning glory. Two dishes heavily influenced by French cooking stand out—stewed beef ragout in lemongrass and star anise, and lamb shank braised till tender and rich with spices and tomato puree. Classic Mekong dishes to enjoy include the Khmer roast duck in green curry, spicy Cambodian basil chicken, and peppery Savannakhet lemongrass chicken. For large gatherings, share a whole steamed sea bass with its pleasing aromas of garlic, coriander and lemon. To complement the mains, order a side of Australian asparagus sautéed with crab paste, with a choice of organic brown rice or jasmine white rice. Dessert includes a satisfying lemongrass crème brulee with a side of vanilla ice cream, as well as deep-fried banana fritters with coconut ice cream.
