Three Stars on a Plate: Chef Simone Fraternali and ilLido at the Cliff

Seated atop a hill on Sentosa’s Tanjong Beach, ilLido at the Cliff serves up delicious modern Italian cuisine with a breathtaking view of the South China Sea.

In our ‘Three Stars on a Plate’ series, we take a closer look at the restaurants who won three stars in our House of Stars category. These seven winners received the highest scores among 300 restaurants surveyed. Get to know each of them, and the one dish they consider their most iconic. 

Chef Simone Fraternali

One of the longstanding restaurants under chef-restaurateur Beppe de Vito’s ilLido Group, ilLido at the Cliff serves up modern Italian cuisine on a scenic hilltop near Sentosa’s Tanjong Beach. Al fresco dining at this restaurant allows one to take full advantage of expansive views of the South China Sea, while indoors, floor-to-ceiling windows let in lots of natural light, not to mention a view of the lush garden outside. Blue velvet-cushioned seats and walnut accents complete the regal, yet relaxed vibe.

Guinea fowl with foie gras and black truffle

Head chef Simone Fraternali has helmed the kitchen here since the restaurant relocated from Sentosa Golf Club in 2015. One of his iconic dishes is guinea fowl with foie gras and black truffle. This dish was inspired by afternoons spent at his grandmother’s house after school, and the comforting guinea fowl casserole she used to make during winter, served with a side of carrots and Marsala wine. Says chef Fraternali, “This dish brings back memories of that time, and reminds me why I had big dreams to become a chef, and to cook authentic Italian cuisine.”
