You could not do better than have his ItalianJapanese tasting menu, where Japanese elements and the chef’s whimsical touches reshape Italian classics. A soup titled ‘Welcome to the Sea’ resembles an underwater garden, with ingredients like sea urchin, abalone, asari clam custard and sakura ebi crumble delectably balanced. A kinmedai carpaccio resembles a wintry scene, with pink grapefruit ‘snow’. Never a dull moment at the table here.
