At Hua Ting Steamboat, diners can look forward to a good selection of soup bases, including a Chinese herbal soup with black chicken, and tomato broth with century egg and coriander. Fancier options are also available in the form of a superior fish soup with winter melon and conpoy.

Must-orders for dunking into the soups include the minced pork ball with water chestnut and fresh shrimp paste ball with minced pork and Chinese wine. Truffle lovers must try the handmade black truffle fish paste noodle.

Rather than offering a fresh seafood station, Hua Ting Steamboat boasts a seafood marketplace where diners can pick from live prawns, lobsters, fish and crabs. Suffice to say, they also have an impressive sauce station offering a bevy of ingredients to make your own blend.

Those pressed for time will appreciate the six new mini hotpot selections for lunch, where the ingredients are already cooked so you can tuck in immediately. It’s not quite as satisfying as cooking the food yourself, but it still hits all the right notes. Try the delicious Kurobuta pork belly casserole with salted fish, which is best enjoyed with the handmade meatballs.
