Hua Ting Restaurant at Orchard Hotel is one of the grand dames of Singapore’s Chinese fine dining scene. Savour authentic Cantonese classics impressively executed by Hong Kong masterchef Chung Lap Fai and his team. Start with the signature crispy roasted duck, perfectly roasted, succulent and tender, with a crisp, caramelised skin. And move on to the salted golden crab shell stuffed with crabmeat and wild mushroom, and steamed crab claw with egg white. The star grouper with crispy rice served in a luxurious, superior stock is not to be missed. Also outstanding are the uber tender sautéed kurobuta pork with XO sauce, the wagyu beef with wild mushrooms and peppercorn, and the wholesome doubleboiled soups. Classic dim sum is also a highlight. Have the crispy beancurd sheet rolls with prawn and seaweed, steamed siew mai with cordycep flower and signature baked mango chicken tartlet that is flaky, buttery, sweet and savoury all at once.
For dessert, order the double-boiled hashima with Tianjin pear and osmanthus and the chilled black glutinous rice with vanilla ice-cream served in whole young coconut. The warm and attentive service rounds off a wonderful dining experience.
