    Nestled in Botanic Gardens Singapore, Halia (Malay for ginger) celebrates tropical herbs and spices in an original and carefully crafted menu. Not surprisingly, ginger underpins more than a few items, including Boston Bay mussels steamed in a fragrant chilli sambal and ginger flower broth, as well as lemongrass prawn salad with tangy mango and ginger dressing.

    While Halia does not offer alcoholic drinks because it is certified halal, it does have a wonderful Herbarium Collection—herbed and spiced drinks that take inspiration from the Garden’s Library of Botany and Horticulture.
