Located on the third floor of the Pan Pacific Singapore, Hai Tien Lo has long staked its reputation as one of the country’s top Chinese restaurants. No surprise then that its menu is extensive, purveying traditional classics alongside modern Chinese favourites.
For starters, enjoy the foie gras with smoked duck, as well as braised homemade bean curd, sliced barbecued duck and shredded jelly fish, and crispy prawn in sesame sauce. Double-boiled soups are a speciality here—try the double-boiled winter melon with abalone, dried scallops and bamboo pith, or the fish maw with bamboo pith in a delicate fish bone broth.
Meat lovers will appreciate the selection of roasted meats on offer here. The suckling pig, with wonderfully crisp skin, and tender, succulent flesh, is a dish that should not be missed. Another must-order is Hai Tien Lo’s long-standing signature—fried beef tenderloin tossed in spicy, tangy black pepper sauce. Alternatively, sample the salt-crusted traditional stewed chicken with dried scallops and wrapped in lotus leaf. There is also an extensive selection of seafood available where guests can choose from myriad cooking styles.
You’ll be spoilt for choice come dessert too. From chilled almond cake pudding and glutinous rice cream with mango pudding to homemade beancurd with bird’s nest and a light and lovely avocado cream, there are plenty for the picking.
All in all, a satisfying and enjoyable experience.
