Situated on the second floor of One Fullerton, alongside a handful of Michelin-starred restaurants, Forlino is the perfect place to indulge in refined Italian cuisine while admiring sweeping views of the Marina Bay waterfront through floor-to-ceiling windows. Helmed by chef de cuisine Matteo Ponti, the food here is influenced by the various regional cuisines of Italy, from the North to the South.
The starters are light yet packed with flavour, best exemplified in a modest dish of Sicilian red prawn carpaccio served with passion fruit dressing and mango gel. The pastas and risottos are not to be missedÂtry the homemade pappardelle tossed in a 12-hour braised oxtail ragu, and the pan-seared Hokkaido scallop risotto cloaked in a sweet garlic cream sauce. Other specialities include the homemade tagliolini served with salmon roe, caviar and a delicious smoked black cod sauce.
The dessert selection is small but inviting. The almond milk panna cotta served with Sicilian orange coulis and salted cacao crumble, which offers a lovely combination of sweet and salty flavours, is a great way to end off a hearty meal.
