Celebrity chef Sam Leongs contemporary Chinese restaurant boasts lofty ceilings, imposing pillars, views of lush greenery and an open-concept kitchenall to give the impression that you are dining amidst a rainforest.
Given the chefs penchant for experimentation, expect to find a wide selection of dishes on the a la carte and set menus here. One could go from luxurious oven-baked six-head abalone with black truffle sauce in salt crust and served with king oyster mushrooms and seasonal vegetables, to something that takes a more eclectic approach. Think moreish milky chicken broth double-boiled with morel mushrooms and wild bamboo pith and served in a Thai coconut shell.
Other dishes to try are the tender and flavourful wok-fried black pepper Australian beef tenderloin cubes served with seared foie gras in yuzu soy sauce, as well as the aromatic king prawn ee-fu noodles braised with ginger and spring onions.
Accompany your meal with a selection of premium Chinese teas, cocktails, Chinese wines and soju.
For dessert, go with familiar favourites such as mango pomelo sago, or try the crispy Thai coconut warm custard and green tea gelato, and the chilled coconut jello made with fresh coconut juice and served with aloe vera, sea coconut and popping candy.
