Located on the ground floor of the National Museum of Singapore, FLUTES Restaurant.Bar exudes elegant charm with tasteful furnishing, beautiful artwork and natural light that filters through the large windows. Creative modern European cuisine is the order of the day here. Thinkpan-fried foie gras with textures of pineapple and chocolate. The richness of the unctuous liver is exquisitely counterpointed by the sharpness of the pineapple, while melted chocolate and chocolate crumble lend a sweet mellow depth to the dish. The seared Atlantic scallops are not to be missed. Sweet, succulent scallops are grilled to perfection, plump within and lightly charred without. Served alongside is chicken skin fried to such an airy crisp thatyou forget how sinful the very idea of it is. From the main menu, try locally farmed barramundi that is so deftly pan-roasted, every delectable mouthful renders silky flesh and crisp skin. It is paired with creamy mashed potatoes, and heirloom tomatoes and rocket leaves for burst of colour and a refreshing tanginess. The dessert of warm apple, pear and raisin crumble is deliciously comforting. The juxtaposition of the warm crumble with cool salted caramel and almond ice cream is a sensorial delight. Not to be outdone is the chocolate and peanut butter fondant. A delightful twist on the ubiquitous chocolate lava cake, this version oozes peanut butter and comes with caramelised bananas, crunchy popcorn and vanilla ice cream.
