    Dolce Vita is absolutely romantic, with poolside views and the twinkling lights of Marina Bay nearby. Impeccable service and excellent classic Italian fare off a concise menu make it a real gem.

    The capesanta is a masterpiece of a starter, featuring lightly marinated Hokkaido scallops with crispy radish, caviar and flavours of green apple, ginger and lemongrass. If cheese is your weakness, the sharp 30-month aged parmesan is sublime.

    On to mains with their delicate fagottelli, which comes stuffed with meaty bolognese ragout, 24-month aged parmesan shavings and tender savoy cabbage. The handmade pappardelle is terribly addictive, cooked nicely al dente and served with slow-roasted lamb and creamy, comforting melted pecorino.

    For dessert, finish with the tangy lemon tart served with elderflower ice cream and sable biscuit. A dramatic interplay of sour notes with subtle sweetness, it is a multi-textural delight.

    Frequented mostly by in-house guests and corporates, Dolce Vita is simply magical, and well deserving of much more recognition by the food-loving public.
