Cut is dimly-lit, romantic and indubitably posh. But atmopsheric setting aside, the reason most people find their way here is meat—specifically, its excellent range of steaks.

But there’s no need to plunge straight into the main act. Cut also offers some exceptional starters that deserve a gander. One of these is the bone marrow flan with mushroom marmalade and bread, with earthy complex flavours.

Of the various types of beef available, the Japanese wagyu stands out for its rich marbling that imparts an incredibly unctuous mouth feel. The American wagyu is similarly fatty, but has a milder flavour. For real bang for your buck, go for the USDA prime rib which sports a delicious crust over succulently tender meat, and paired with side dishes likecreamed spinach.

The desserts are as rich and indulgent as the meats. The pandan baked alaska is a firm favourite, incorporating familiar local flavours to this classic American sweet. Cut into its silky meringue shell and you will find a fragrant kaya (coconut-egg jam) flavoured ice cream that will end your meal on a very happy note.
