Cure, a modern European bistro, charms with its earnest, intimate vibe.
It works on a set menu-only basis, starting from $128 for a five-course dinner. Here, chef-owner Andrew Walsh’s minimal-waste philosophy makes for some truly original ideas. For instance, a main course titled Prawn and Corn showcases the primary ingredients in a three-part act: charred corn with quinoa puffs and prawn mayo; sweetcorn espuma with buckwheat-and-prawn-shell granola; and red Argentinean prawns with prawn bisque. These creative twists are grounded by comforting flavours. The pigeon course, too, comprises more than the usual roasted pigeon—it is also accompanied by pigeon legs cocooned in a lattice of shredded potato and deep-fried, and a pigeon foie gras custard served crème brulée-style.
Another distinguishing factor: the bistro offers a full vegetarian tasting menu that largely runs parallel to the regular tasting menu, and is every bit as luxurious. For instance, white truffle shavings replace caviar in the indulgent starter of burrata gelato and white asparagus emulsion.
Beyond wine pairing, Cure offers a tea-pairing option that includes housemade kombucha.
