Furnished with intricate wooden panels and a ceiling full of delicate paper flowers, Crystal Jade Jiang Nan’s interiors are as alluring as its Jiangnan and Sichuan inspired delicacies.
Start with the Three Delicacies Platter, a trio of cold appetisers consisting of tender salted duck; smoked fish, lightly tossed in a sticky sweet sauce; and poached spinach with a creamy sesame dressing. Follow that up with their mala crispy roasted chicken—delectably juicy meat against crisp and salty skin, sitting over a lightly spiced mala sauce.
Cut the richness with a wholesome soup. The double-boiled conpoy and chrysanthemum soup with pearl abalone comes daintily served in a small, traditional Chinese teapot, with cup alongside to indulge in the nutritious, savoury broth. For a light touch, have the sautéed egg white with conpoy and fish comprising a divinely delicate porridge of tender flaked fish and egg white in a light, fragrant gravy, finished with runny egg yolk. In this lies richness in every bite.
A hot cup of premium snow chrysanthemum tea and an order of Japanese sweet potato pastry—involving a smooth paste of purple sweet potato encased in deep-fried parcels of flaky pastry—make for a soul-satisfying end.
