A spacious dining room and cheery atmosphere greet diners at this Japanese restaurant on the first floor of Changi Village Hotel. With its focus firmly set on the use of fresh ingredients, the menu here presents plenty of choice, from sushi and sashimi to skewers of grilled meat. Those who want to try a bit of everything should head for the kaiseki options, the most popular of which is the sushi kaiseki. With it, you get a flight of ocean-fresh fish on neatly formed nuggets of Japanese rice. At lunch, the bento sets offer great value for money with their sheer variety. A fine way to kick off a meal here is with the stir-fried clams in garlic and butter. The rich sauce is suffused with briny umami, and is so addictively good, it will be tempting to order a second helping. Another excellent starter is the grilled eel wrapped in egg. The toothsome, bouncy grilled egg is a splendid complement to the silky eel glazed in a sweet-savoury sauce. Meanwhile, the grilled items showcase the kitchen’s deftness over a fire. The morsels of kurobuta pork are redolent of smokiness while retaining their characteristic flavour and tenderness. That delicate layer of fat within each cut of meat just adds to its satisfying allure. A more decadent option is the panfried beef tenderloin with foie gras—the rich ingot of liver delivers an added richness that feels incredibly indulgent. The selection of desserts is impressive. Our favourite: matcha ice cream cheesecake—smooth, satiny and a great way to end a satisfying meal.
