Begin with dainty starters such as steamed scallops and sea urchin har gao and signature duck foie gras xiao long bao. For mains, the Maine lobster Hokkien noodles is a must. Served with a tantalising seafood broth and a large, umami-laden lobster, it is richly savoury with smooth, luxurious textures. So too is the crispy scales wild coral cod fillet, whose sweet-and-sour gravy delights with robust flavours. End with the airy flourless soufflé with housemade ice cream.
