Bistecca is Italian for steak, and the highlight here is definitely the meats. Their signature Fiorentina ($188)—a hefty 1.1kg T-bone steak—is a must-try. Evenly charred outside yet grilled to a perfect medium-rare on the inside, the generous slab of beef with a marbling score of six, boasts bold beefy flavours and a tender, succulent texture. Other premium cuts include the 150g A4 wagyu striploin from Hokkaido with its nice bite and meaty flavour, and the 200g 420-day grain-fed tenderloin from Australia, and the 300g Angus pasture-fed rib-eye from Australia, a great cut for good robust flavour. Accompany them with sauces such as rosemary mustarda, and salsa béarnaise, and sides such as creamed spinach with crispy shallots, and char-grilled asparagus. For non-meat options, a selection of freshly made pastas entice, including pappardelle tossed in a rich beef, tomato and red wine ragu, and agnolotti with sweet pea, creamy ricotta, pistachio, pickled onions and mint. Pair them with a wide range of Italian wines by the glass.
