The namesake restaurant by celebrity chef Akira Back is an ode to his Korean-born, Aspen-raised heritage, with exquisitely crafted culinary creations that seamlessly marry contemporary Japanese cuisine with Korean accents. Like his other award-winning outposts around the world, this elegant Singapore outfit is impressive, with impeccable service and chic interiors.
A la carte choices are based on sharing plates through a tantalising variety of hot and cold appetisers, sushi, sashimi and hand rolls. Start with the signature (cold) AB tuna pizza, where delicate slivers of raw tuna are piled on a wafer-thin crisp base, then drizzled with umami aioli, lashings of truffle oil and a hint of citrus. Complement it with the equally popular AB wagyu tacos brimming with melt-in-your-mouth beef and a spicy tomato ponzu sauce; while the crispy tofu— similar to agedashi tofu—is moreish, with perfectly balanced gochujang soy and finger lime dressing. The seaweed salad is understated, featuring fresh wakame and prized red and green tosaka nori. The selection of mains though small, hits the mark with the ‘Sanchoku’ short rib braised for 48 hours. Expect incredibly juicy and tender meat after two days of slow-cooking, served with a reduced braising jus to show off its natural flavour.
