Racines, located on the fifth floor of the Sofitel Singapore City Centre, is the hotel’s stylish dining establishment. With floor-to-ceiling glass windows, sparkling marble tiles, banquette seats and full-length wine fridges, the space—which also comes with a sweeping view of the surrounding Tanjong Pagar area—makes for a choice dining venue any time of day.

Helmed by executive chef Jean-Charles Dubois, Racines’ menu features a culinary duality of authentic French and Chinese classics. The latter is created by master chef Andrew Chong who heads up the Chinese kitchen of this unique restaurant. Start with the rich lobster bisque, a heady broth that is drizzled over petite emmental ravioli and spiked with a hint of chilli and laksa leaves. These Asian additions really elevate the dish from classic to special.

Another dish that straddles Chinese and French cuisines with delicious flair is Frog, comprising two plump frog legs deftly stir-fried in a light Szechuan salt sauce.

Dessert options are plentiful, with mousse au chocolat arguably its best. Presented in a glass jar, a thin disc of semi-sweet chocolate protects the light-as-air mousse studded with crunchy chocolate pearls served alongside a moist sponge cake—a soul-pleasing dessert if there ever was one.
