NUDE Seafood—a name reflecting their concept of NU-tricious and DE-licious fare—is an unpretentious eatery located at Marina Bay Financial District. In the spotlight is good, fresh seafood served classically with some contemporary twists. Superb quality and reasonable pricing are a given as the owner is from a family of seafood wholesalers.
For lunch, the delicately grilled miso Canadian halibut is highly recommended. Fresh, flaky and beautifully seasoned, it pairs nicely with crunchy quinoa and broccoli in a capsicum dressing, topped with toasted almond flakes. The hickory smoked salmon is also good: the fish lightly smoky, tender and moist, served with unique sides of black forbidden grains and purple cabbage in a zingy ponzu dressing. Alternatively, go for good old fish and chips, made with sustainably caught New Zealand ling cod that’s cooked wonderfully crisp on the outside and fluffy within. It is served alongside sweet potato fries and exquisite housemade tartare sauce.
At dinner, NUDE Seafood focuses on contemporary Asian fare inspired by the chefs’ comforting childhood dishes. Go for the black pepper king prawns served with deep fried, pillowy mantou to mop up the flavourful sauce, or the ‘squirrel’ grouper, the fish flash-fried in a lightly crisp batter and served over a rich sweet and sour gravy with slices of sweet lychee and topped with airy oatmilk foam.
End on a sweet note with one of their playfully composed desserts, like the honeydew sago with peach gum, a unique twist on a childhood favourite.
