Helmed by executive chef Bettina Arguelles, Publico Ristorante brings authentic Italian with a contemporary twist to the neighbourhood of Robertson Quay, serving up fantastic pizza, pasta and cocktails from the bar. Situated along the Singapore River, the restaurant boasts an open kitchen with wood-fired pizza ovens, complemented by modern Italian chic detailing, from custom furniture pieces to lush outdoor greenery within the terrazza.

To start, nibble on crisp calamari and cauliflower fritti served with tangy lemon and caper aioli. They pair beautifully with a chilled white wine. The Publico salad is also an excellent choice for its sweet and savoury mix of candied orange, prosciutto, roasted hazelnuts and robust gorgonzola, each bite complete with playful balsamic pearls. For mains, the generously laden lobster spaghetti is delicious. But the star of the show is the unforgettable tartufata pizza, a whitebased pizza topped with black truffle, mozzarella, porcini mushrooms, smoked scamorza and a drizzle of truffle oil. The pizza crust, made in-house and proofed for 24 hours, is deliciously crispy yet chewy.
