One of Singapores longest-running seafood restaurants, Palm Beach at One Fullerton is popular with tourists and families who have been patronising the restaurant for generations. It is so popular, in fact, that every table is given a two-hour window to enjoy their meal, either in the elegant air-conditioned dining room or alfresco area overlooking the waters and Marina Bay Sands.
What sets Palm Beach apart from other seafood restaurants of its ilk is its contemporary offerings. While there are well-loved classics like chilli crabs, there are also more creative alternatives like Marmite crab claypot rice and crabs bathed in a moreish combination of French butter, curry leaves and chilli padi. Done this way, the sweet crabmeat is subtly perfumed by curry leaves, which in turn serve as a bright counterpoint to the rich, buttery sauce. Indeed, Western influences have made their way into the otherwise traditional Chinese kitchen, with additions like a Josper charcoal oven which turns out things like beautifully charred Australian beef skewers flavoured with lemongrass and served with a lush peanut sauce. Another standout is the crispy fragrant duck that is first steamed with hua tiao wine, star anise and cinnamon, then deep-fried to a delightful crisp.
